We tried the lamb shanks last night with prunes and apricots, was a big hit with the entire family, including the two seniors (over 80). Am a working mother (like most people) and just love coming home to a cooked meal. Will now try all of your recipes.
Last time I cooked the Apricot Lamb Curry I used chump chops and left the fat on. When it had cooked there was a layer of oil on top of the stew. I spooned this off. But to prevent this just trim the chops of the fat first. (Lamb fat seems to do this much more than other meats???).
Modified version of a recipe I found on the 'net that I thought turned out great. Apart from a few small changes to seasoning the original recipe called for a cup of wine rather than beer, sometimes I feel with tomato that makes things a bit rich when slow-cooked and I thought the beer substitution
My DH's favorite, we have it every year for Christmas dinner. I don't follow the recipe all the time w/this, always adding more of every thing, including peas sometimes and have also added some red wine instead of all water.
