Zucchini lasts for approximately five to seven days as long as it is properly stored in the refrigerator. Zucchini only lasts for three to five days when it is left out on the counter.
It is possible to extend the shelf life of zucchini by using the best storage methods, such as wrapping the zucchini in a plastic bag before placing it in the produce section of the refrigerator. Zucchini must be used before it starts to feel soft and mushy or a white liquid appears on the skin. Once any signs of deterioration begin to appear, zucchini must be discarded.
