Saute zucchini, onion and garlic in 1 teaspoon margarine for about 5 minutes. Mix remaining ingredients until blended. Form into 8 patties and brown in 1 tsp of margarine in large skillet, over medium heat, about 3 minutes.
Mix all ingredients, except oil, and form into patties, about 3/4" thick. Heat a nonstick skillet with canola oil on medium; add patties. Cook 3-5 minutes on each side or until golden brown. Serve hot.
