because fat chance is sarcastic... as in it is the opposite of slim chance... hence why "fat chance" is always said with a slight laugh or snigger

Actually, I think the answer is more along these lines. "Slim chance" is what you say when you feel something is unlikely and you want to be clear about it. "Fat chance" eally does mean the opposite of slim chance, but it is said ironically....

It's just an expression. To say 'fat chance' means of limited possibiity (almost dismissive); & 'slim chance' means it is possible but reduced.
