Freezer burn on chicken occurs when water molecules escape from the chicken causing the meat to become dehydrated. You will know if your chicken has freezer burn by inspecting the texture and color of your chicken. If it has dark dried out patches or excessive ice crystals chances are your chicken has freezer burn. You may still be able to salvage it by removing the dried out patches. You will want to completely thaw the chicken before removing the damaged pieces to make sure that you get them all.
