There are various types of vegetables that are also known as roots. These are healthy vegetables that we should often eat. These root vegetables include such healthy choices as ginger, onions, garlic, fennel, yams, carrots, radishes, and beets. All of these vegetables can be eaten in a variety of ways. Many of them can be used in salads. Some may be used in stir-fries. Some may be used as side dishes. They all also contain a variety of vitamins and minerals. The yam contains both Vitamin C and potassium.
