Oven Baked Striped Bass

  • 1/2 large lemon
  • 3 pounds striped bass
  • 3 cloves garlic
  • 1/4 cup white cooking wine
  • 2 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • 2 tablespoons capers
  • 2 tablespoons capers
  • 1/4 teaspoon black pepper

Preheat oven to 425 degrees, rinse fish under cold running water and pat dry with paper towels. Make a diagonal slice almost to the bone right behind the head. Cut two more slits at equal intervals. Turn the fish over and repeat on the other side.

Cover the bottom of a cookie sheet with foil. Lay the fish on the foil. Cut the lemon into four slices, and insert one slice into each cut on top of the fish. Squeeze the remaining juice over the top of the fish. Slice one clove of garlic into three equal pieces, and insert one slice into each cut on top of the fish next to the lemon.

Drain the capers and place into a bowl with the remaining ingredients, and whisk until well combined. Pour over the fish and rub liquid in with hands.

Step 4:Cover the fish with foil and crimp the edges together. Bake for 30 minutes.
