A dry rub or a brine is necessary for delicious pork ribs. A herb brine can be made by combining two teaspoons of whole black peppercorns, four juniper berries, six Turkish bay leaves, eight large fresh thyme sprigs, three fourth cup of fine sea salt, one and a half cups of sugar, and six quarts of cold water. One quart of water plus the other ingredients should be brought to a boil and then the pork needs to be added to the brine with the remaining five quarts of cold water. The pork can be removed from the brine once it cools.
