This recipe recreates the vegetable soup that they serve at cracker barrel. It is great for a big group and cooks in about an hour. To make the soup, peel and dice one pound of Idaho potatoes. Then dice up six and a half cups of tomato. Put the potatoes and tomatoes into a crock pot along with one gallon water. Add 20 ounces each of frozen baby lima beans, peas, and corn. Put in 14 ounces tomato juice, five ounces beef base, four ounces chopped onion, four ounces chopped celery, and one ounce diced green pepper. Cover and simmer on hight for 30 minutes. Then uncover and let simmer an additional 30 minutes. Enjoy.
