To make fish soup, you will need 1 large onion, 3 cloves of garlic, chopped carrots, 2 tablespoons of olive oil, 1/2 teaspoon of crushed red pepper, 1 bay leaf, 1 tablespoon of anise-flavoured aperitif and 1/2 a kilo of fish. Saut© the onions in olive oil until soft and add garlic then saut© for another minute. Add everything except fish and aperitif and boil. Lower the heat and simmer for 15 minutes. Add fish and simmer for 2 to 3 minutes and then serve.
