To roast cashew nuts, preheat the oven to 177 °C then arrange cashews in an even layer on a baking sheet. Place a baking sheet into the oven for approximately five minutes. Remove the cashews from oven and stir to prevent burning. Put them back for five to 10 minutes and remove them once they are golden brown. Let them cool until warm then coat the cashews slightly with oil. Add some salt and leave to cool.
