Fish for making home-made sushi should be purchased from a sea monger, not a local grocery store. Freezing fish for 24 hours and allowing it to thaw in the refrigerator will reduce harmful bacteria, making the fish safer to eat.

Cooked sushi such as the California roll can be kept for up to 48 hours.
