Amberjack fish are delicious when prepared properly. First clean and rinse the amberjack fish filets. Apply a coating of a mixture of 1 cup all-purpose flour, 1 tsp minced garlic, 1/2 tsp salt, and 1/2 tsp black pepper. Spread evenly over the filets. Add 3-4 tbsp of olive oil in a pan and heat the oil using a medium to high heat setting. Place the fish in the pan and avoid overlapping. Cook for 3-5 minutes or until the bottoms of the fillets are brown. Turn the fillets over and cook for another 3-5 minutes or until it is fully cooked. Sprinkle with fresh minces parsley.

I like to grill or pan fry the fish more then making curries out of them. Amberjack fish does not need a lot of marinating time either, just crush some fresh garlic and fresh red chillies together, add salt and lemon juice apply it well to the fillet and keep aside for 30 minutes and grill for 5 minutes on each side.
