When cooking a ham hock, wash it in cold water and put them in a pot with onions, carrots, bay leaf, cloves and peppercorns. Heat the cold water till it boils and then simmer for three hours. Remove it and leave it to cool. When cooled remove and discard the outer layer leaving1/2cm of the fat to protect the meat. Score the fat in a criss-cross manner then pre-heat the oven to 200C.Put it on a baking tray that is lined with tin foil. Bake for 30 minutes and the ham hock will be done when it is golden.
