As the oven heats, wash the stingray fillets in cold water and remove excess water. Cut the stingray fillets into serving size pieces. Beat the egg and milk together in a small mixing bowl. Spray the bottom of a shallow baking pan with vegetable cooking spray. Place the coated fillets in the greased baking pan and top with melted butter. Bake the fillets until the stingray is golden brown.
