To make plum liquor or Umeshu, you need lots of plums, a bottle of rum and about 4 cups of sugar. Wash the plums and remove the seeds then put them in a large jar together with 3 cups of rum and 4 cups of sugar. Stir the plums daily for about 2 weeks after which you should sieve out the remaining bits of plum: you should have a nice big jar of plum wine after all the fruit bits are removed.
