How to Preserve Figs?

Answer

This is the recipe that I always use. Cook 4 1/2 lbs of figs 15-20 minutes in enough boiling water to cover; drain figs and set aside. Combine 7 cups of sugar, 1/2 cup lemon juice and 1 1/2 quarts of water in a large Dutch oven; cook over medium heat , stirring constantly, until sugar dissolves. Add figs; return to a boil and cook for 10 minutes stirring occasionally. Add 2 lemons thinly sliced and boil for 15 minutes or until figs are tender and clear. Ladle into jars and process in boiling water bath for 30 minutes.
