Old cast iron cookware has been a favorite type of cookware for cooks for centuries. Cast iron can withstand much abuse over a long time and are often passed down from generation to generation. It is not only durable, but produces good results on most dishes. If you find a piece of old cast iron cookware, you can refurbish it so it will become usable. First, wash the cookware in soapy water. Next, remove rust stains with a wire wool scrubber. Now you have to condition, or 'season' your cookware. Dry the pieces with a paper towel. Pour vegetable oil or lard into the pot and wipe the oil around the inside of the pot. Place the pieces into an oven at 220 degrees for two hours. Remove it, allow it to dry and when cleaning it from now on, do not use soap and water, but simply wipe the pot out with a paper towel.
