When you fry food you are changing the basic element of that food. Chicken can be perfectly healthy when served baked or pan fried. When it is deep fried you are adding a breading and submerging it in fat to fry thus making it much less healthy. When you dry vegetables you are repeating this process. Adding breading and submerging into boiling fat. While it may taste delicious you are altering the nutritional value of the food and that gives negative effects to the food.
