If I were you, I would use the regular rice vinegar. Maybe if the recipe calls for a cup, do 3/4 rice vinegar, and 1/4 Apple cider vinegar. That way you get a little more flavor.

out of what I have read you should use white wine vinegar it is almost the same as the rice vinegar.
