A Red Shift (redshift) is a shift to longer wavelengths of the spectrum by an astronomical object. It is so called because such a shift is towards the end of the spectrum that is red. A more scientific definition is that of a shift of the frequency of a photon to a longer wavelength and therefore lower energy.
