At night house flies at ceiling hangings, at the corners of rooms, barns, and cellars since they are only active during the day. During winter they survive by hibernation. They carry so many disease causing organisms mostly on their hair and mouthparts.

They all gather and buzz around my ears. lol I am not sure where they go. But it would make sense that they sleep at least for a short time and than get up to find a new food source

Flies don't sleep, but at night they find a comfortable spot to rest in. They won't be found out in the open, but they might be hiding in a dark corner.
