The u-shaped valley is formed by a glacier and a v-shaped valley is formed by a river. So to change from a v-shaped to a u-shaped you would a have to have a river formed valley that was then carved out by a glacier.

V-shape is from water erosion most of the time, U-shape is normally glacial. It is due to the hydrodynamic differences between the two. Basically, glaciers abrade away wide areas and water picks away loose pieces.
